There is nothing more soothing and satisfying than a bowl of warm soup. Since Winter has set in big time on the East coast, I have been going soup crazy. The great thing is, they can be made ahead of time, can be frozen for later and can feed a big crowd. So many choices to chose from and with any recipe, you can add ingredients to make it your own. I almost always, change things up everytime I make something just to surprise my family and make it interesting. I used bone broth for it's nutrition power and basil for it's high levels of antioxidants and magnesium. To make this a full dinner, I paired with sourdough grilled cheese sandwiches and a big salad with mixed greens. When you are busy and just don't feel like making a big meal, this is a perfect choice. Oh, and with only 5 ingredients, you can't get any easier than this!

What you will need

  • 2 jars of organic whole tomatoes
  • 1 medium onion
  • 2 cups bone broth or stock
  • 1 cup fresh basil
  • salt and pepper to taste

Putting it together

  • In a medium sauce pan, add 2 Tbs. olive oil and diced onion
  • Saute until translucent
  • Add 2 jars whole tomatoes
  • Add 2 cups bone broth, if you don't feel there is enough liquid, simply add 1 cup water
  • Add 1 cup basil and salt and pepper to taste
  • Let simmer for 15 minutes, then with an immersion blender or high powered blender, combine
  • After blended, let soup simmer for 15 minutes longer.
  • Store or serve
