chicken satay with spicy peanut sauce
This is one of my favorite snacks to have in the fridge as a leftover or a light lunch, and the sauce stays good in a sealed jar for weeks. I stayed away from asian inspired dishes for so long because of my food limitations. I still don't eat peanut butter all that much, but it can be subbed with almond butter and the taste doesn't really change. This sauce, along with all of the accompaniments, is so fresh and delicious and easy to change as your diet allows. Use grilled fish instead of chicken, stick in all of the fresh herbs you like or add more heat if you love spicy! Either way, I know you will make this part of your recipe file.
