With Thanksgiving behind us and the holidays in front of us, I am just in the mood for nourishing comfort food, before all of the craziness begins. Even when you are conscious of the food you eat, at times you can over indulge and your tummy isn't your greatest fan.
This is one of my favorite snacks to have in the fridge as a leftover or a light lunch, and the sauce stays good in a sealed jar for weeks. I stayed away from asian inspired dishes for so long because of my food limitations.
Lunch is always my hardest meal to figure out. Most days, I hate to stop and make myself a meal. I try my best not to skip, because when I'm starving, I risk snacking and making unhealthy choices. This is so simple and doesn't require any cooking.
Easter just passed, so left over hard boiled eggs may be in abundance. This is a great way to use them up in a delicious and healthy way! Deviled eggs are my new favorite go to snack. Since eliminating grains along with gluten from my life, finding quick easy staples to keep in my fridge has been challenging.
Soups are good for the soul and the belly! Warm and delicious soup nourishes your body especially if you are still in the deep freeze of winter. This recipe is simple to make and packs a nutritious punch.
