I am all about simplicity and most nights it’s as easy as white rice or roasted potatoes, but sometimes it’s fun to mix it up! This Wild Rice side is very easy, but a departure from the norm, so it’s special. Everything I make, my goal is to use the best quality ingredients and if I can increase the nutrients I do.

For this side I added Bone Broth instead of water. It makes it more flavorful but really healthy too. You can check out my recipe for homemade bone broth or buy a good brand, there are so many available. This wild rice has nutty flavor with a touch of chewiness, that makes it the perfect side to any main dish.

I paired it with Fig Glazed Pork Chops and the combination was amazing. There is nothing better than food that looks delicious, but the secret is, it takes minutes to make, and healthy to boot.

Add this to your side dishes and don’t be afraid to add a few extras if you want to make it your own.

INGREDIENTS

  • 2 cups wild rice (Lundberg is my favorite)

  • 3 1/2 bone broth

  • 3 stalks diced celery

  • 1/4 cup green onion

  • 2 Tbs. slivered almonds

  • 1 lemon

DIRECTIONS

  • Boil rice according to package instructions, using bone broth for liquid

  • When rice is finished cooking, add diced celery and slivered almonds

  • Combine rice together

  • Top with green onions and a squeeze of juice of one lemon

  • Serve
