healthy rice crispie treats {gluten free}

Easter is right around the corner and treats are everywhere! When it comes to sugar overload, its right up there with Halloween. I get kind of crazy trying to control the consumption, but what I am good with is one and done. That means I put healthy options along with these semi healthy treats and then everything disappears. I may take the packaged treats and hide them for lunches or special occasions, but the day after the holiday, they are gone! This makes me feel less guilty about the less healthy options and it makes them happy that they had a free day to indulge. Don't get me wrong, they have treats all of the time, what I call treats and it is in moderation, not a full blown buffet of choices! Everybody loves a little sweet after a savory lunch or dinner right? 

I turned a simple traditional recipe and turned it healthier just by choosing better ingredients. They are so buttery, crunchy and chewy all at the same time. This is a recipe that needs to be eaten quickly, they turn quite hard pretty quickly, so use them on the day you make them. They take minutes to make and no baking required. I added festive organic sprinkles without horrible sugars or food dyes and chose a brown rice cereal. Go ahead, give them a try, they are perfect anytime, but just so pretty for Easter!

What you will need

  • 8 Tbs. organic salted butter
  • 6 cups brown rice cereal (Erewhon)
  • 1 bag (10 oz.) Marshmallows ( I found a bag in the Kosher section that used all real ingredients and no fillers or additives)
  • Let's Do Organic Sprinkelz

Putting it together

  • In a medium sized pan, melt butter, let turn a light brown for extra flavor
  • Add marshmallows, melt and combine completely
  • Turn off heat and add brown rice cereal, mix and add 1/2 amount of sprinkles to mixture
  • Spray an 9x9 pan and pour mixture into pan. Press down with hands (use wet hands, so mixture doesn't end up all over your hands!) 
  • Top with left over sprinkles
  • Cover and let completley cool. When ready to eat, cut into 9 squares
