avery's spinach pasta
My family doesn't eat pasta very often and spinach is a tough stand alone, when it isn't hiding in a smoothie! Avery is my fussiest eater and she can't get enough of this pasta. She actually jumps up and down with excitement when this is on the menu. This is one of those recipes that I always have the ingredients on hand, and there are only six ingredients. Can you say super fast and amazingly good for you. If my pickiest eater asks for this dish, you definitely need to give it a try. I know this will become one of your go to weeknight meals when you need something fast and healthy.
1 pound quality sourced ground beef
1 bag organic spinach
1 8oz container Mascarpone cheese (similar to cream cheese)
1 chopped onion
1/4 cup romano cheese
1 pound gluten free pasta ( I used Barilla gluten free for this recipe)
In a large pot of boiling water add pasta
Reserve 2 cups pasta water while pasta is boiling (this will help to thicken sauce)
In a medium skillet saute' onions in olive oil until translucent
Add ground beef, brown
Add container of mascarpone cheese
Mix ingredients together until beef is coated
Add bag of spinach , let wilt
Add 1/4 cup Romano cheese, mix
Drain pasta and add to skillet with cooked ingredients. If it seems dry, add some reserved pasta water and mix.
Add Romano cheese to taste.
