caesar dressing

I love caesar salad. I love it with chicken, with salmon or even plain over crispy romaine lettuce. Making the dressing homemade, means you can control the ingredients and make it pretty healthy. It is thick and silky and full of flavor. 

Yes, I use raw egg yolks, but no fear, use pasture-raised organic and it will be fine. There are also benefits. Egg yolks contain highly concentrated fat soluble vitamins. The yolk is where you can find B vitamins like the very crucial B6 and B12,  plus minerals like calcium and zinc. 

This dressing can be stored in the refrigerator in a glass mason jar for a couple of weeks.


What you will need

High powered blender 

1 cup extra virgin olive oil

2 egg yolks

1 tablespoon dijon mustard

1/2 cup fresh squeezed lemon juice

1 teaspoon anchovy paste or 2 anchovy filets

1/2 cup grated parmesan cheese

salt and pepper to taste

Place all ingredients in blender on high until combined
