peanut butter buckeyes

This is definitely a cookie that can pass as a healthy treat. Perfect for Christmas but great all year long. The best part is, there is no baking involved. Kids make the best helpers for this recipe and they feel like they have made something spectacular. These are grain free, gluten free and refined sugar free. I held them together with coconut flour for a punch of fiber. So don't feel guilty eating these treats filled with protein, fiber and good fats. Eat away!!!!

What you will need

  • 2 1/4 cup organic no sugar added smooth peanut butter

  • 1/4 cup coconut flour (I use Nutiva)

  • 1/4 cup real maple syrup

  • 4 Tbs. organic butter

  • 1 bag semi-sweet chocolate chips (enjoylife)

  • 1 Tbs. coconut oil

Directions for the dough

  • add peanut butter, softened butter and maple to a medium sized bowl and combine until smooth. I use my Kitchen Aid, it's less work.

  • slowly add coconut flour and combine until it creates a smooth dough

  • wrap finished dough in plastic wrap and refrigerate. I make this dough the night before.

  • when your ready, take dough out and roll 1 inch balls. Place on tray and put in freezer for 1 hour

Directions for chocolate coating

  • melt coconut oil and chocolate in a double boiler over low heat. Make your own using a glass bowl, placed in a medium sized pan. Make sure bowl doesn't touch the water.

  • using a toothpick, dip peanut butter ball in chocolate and place on parchment paper

  • put balls in the freezer to set

  • this recipe makes 3 dozen cookies

  • store in freezer or fridge
